SPANISH OMELETTE | TORTILLA ESPANOLA

Its been quiet around this blog for a bit. I spent a whole week and a half cooking various things that seemed like a good idea in my head. Most of them ended up being kitchen duds! A couple of recipes that worked were still lackluster. But then, this afternoon, I started thinking about making an omelette for dinner. Usually, when I get omelettes for breakfast, the hashbrowns are my favorite part! So when I figured I could work potatoes into my omelette, there was no turning back!




In my mind, potatoes just have an easy hold on people. I don't know what it is about them - but they are definitely a comfort food for me. So this recipe with eggs nicely balances the comfort and healthy factor.
This, like most recipes I like, can be modified as you like. Add more veggies to make it healthier or keep it originl with onions and potatoes.Herbs are a nice addition to this as well - you can go with whatever herbs you like. I added cilantro and basil.






RECIPE
Prep Time :15 minsServes:2-3 people
Cooking Time :20-25 mins
INGREDIENTS
>3 eggs
>2 small potatoes
>1/2 yellow onion, sliced
>herbs - cilantro, basil, thyme (or any of your choice)
>Salt Pepper to taste
>Olive oil
>Cheese - mozzarella, goat cheese (optional)
INSTRUCTIONS
*Preheat Oven to 350 degree
*Wash potatoes clean and slice using a mandolin or regular knife
*Place the sliced potatoes on a plate and put them in the microwave. Leave a glass of water (only a little water, otherwise you will get a water-bomb as the water heats) in the microwave alongside.Microwave for 5 mins
*In a pan, add 1 tbsp of olive oil and add sliced onions. Cook for 5-10 mins on med low flame till the onions are soft and start to caramalize. Let cool.
*In a bowl, crack eggs, add herbs, cooked onions, salt/pepper and half of the potatoes
*Grease a cast iron pan or a baking dish with olive oil
*Line the base with sliced cooked potatoes. Work with the potatoes quickly before they are completely cooled.
*Add the egg mixture and bake for 20 mins. Check at 15 min mark for doneness
*Slice and enjoy!

  4. Breakfast for dinner is always a good thing and can we forget how healthy it is.

  5. Love Spanish Omelette, I recently made Giada's version, but it never made it to the blog, didn't think it was that flavorful. I love the herbs you added... I think the key is to season everything really well since it's just eggs and potatoes.

  7. I haven't had a Spanish omelette since my trip to Spain 2 years ago...this post reminds me just how much I love them!

    2. not at all ! If you stick potatoes - sliced or whole in the microwave, its going to use the moisture from the potatoes to cook it (as it does with all foods) that will shrivel up the potatoes. very unappealing! The glass of water give the microwave cooking moisture and leaves your potaotes nice and plump. Its a trick I learnt after many a shriveled potatoes!

  10. Yes, potatoes and eggs belong together for sure! I'm not crazy about eggs alone, so adding cheese and potatoes helps. :) This looks delicious!

  12. I agree- I think potatoes add the perfect amount of heartiness to a breakfast dish and love it with my eggs. This dish looks amazing, I love the thin potatoes and think I will try it next time I make breakfast. I usually do small cubes so this will be a nice change.
